Cappuccino Muffins

These are really cake in a muffin disguise. I like to make them for a potluck brunch at church, rather than a regular thing at home. They are different and always bring compliments. 

CAPPUCCINO MUFFINS                        makes 14

Espresso spread:               

4 oz. cream cheese, cubed       

1 Tbs. sugar               

1/2 tsp. instant coffee granules       

1/2 tsp. vanilla               

1/4 C. mini choc. chips           



2 C. flour

3/4 C. sugar

2 1/2 tsp. baking powder

1 tsp. cinnamon

1/2 tsp. salt

1 C. milk

2 Tb. Instant coffee granules

1/2 C. butter,melted

1 egg, beaten

1 tsp. vanilla

3/4 C. mini choc. chips

In food processor or blender, blend spread ingredients until well blended. Refrigerate until serving. Combine flour, sugar, bkg powder, cinnamon and salt. In another bowl, combine milk and coffee granules until dissolved. Add butter, egg and vanilla; mix well. Stir into dry ingredients just until blended. Fold in chocolate chips. Fill muffin cups 2/3 full. Bake at 375° for 17-20 min. Cool 5 min. before removing to racks.
