Pumpkin Pecan Loaves/Cake


This maks and extra large batch which is great when you have guests coming for the weekend AND it is your turn to take snacks to church.


PUMPKIN PECAN LOAVES AND BUNDT CAKE                

makes 2 loaves and 1 cake    


1 29 oz. can pumpkin          

 1 1/2 C.  olive oil                  

8 eggs                   

1 1/3 C. orange juice            

2 2/3 C. flour               

4 C. W WP flour               

2 C. sugar                   

4 tsp. baking soda            

3 tsp. salt                    

2 tsp. cinnamon

2 tsp. nutmeg

1 C. chopped pecans


Mix wet ingredients, add dry ingredients, blend , then stir in nuts.  Pour into 2  greased loaf pans and 1 bundt pan. Bake at 350° for 60-65 min. or until tests done. Cool 10 min. before removing from pans to racks. 



GLAZE:

1/4 C. butter

1/4 C. sugar

1/4 C. brown sugar

1/4 C. whipping cream

2/3 C.  powdered sugar

1tsp. vanilla


For glaze: combine butter, sugars and cream in saucepan. Cook until sugar is dissolved. Cool 20 min. Stir in powdered sugar and vanilla until smooth. Drizzle over cooled loaves and cake.
